Smoked Tofu can be used fresh (it is sold as a chilled product) or frozen. If you freeze it then first cut it into a portion sized chunk. Then, during defrosting press it briefly between two pieces of kitchen paper - to remove excess liquid - so it fries quicker and with less sputtering. Fresh tofu does not need this treatment - fry it cubed straight from the packet.
If you have no smoked tofu then toast or fry some cashews - for protein and flavour.
Lots of fresh ginger and garlic in your stir-fries is nicer than just a heavy hand with the soy sauce.
If you use tofu or nuts you don't absolutely have to do brown rice (a protein combination food) and you can just use your ordinary choice of white rice.
