APPLE AND APRICOT SLICE

Serves 6

                        1 small packet puff pastry         A sprinkle of caster sugar

                        500g cooking apples                 5 level tablespoons sieved apricot jam

                        1 small tin apricot halves

1.      Roll pastry into a strip 150cm wide and 300cm long and place on greased baking tray.

2.      Peel and core the apples and slice them thinly.

3.      Drain off the juice from the apricots.

4.      Arrange apple slices in pairs over the pastry, then place a row of apricots with and

apple slice between each one down the centre.

5.      Sprinkle the fruit with caster sugar.

6.      Bake in a hot over, 220c/425f/Gas 7 for 20 minutes, then lower the heat to 180c/350f/Gas 4 for a further 5 minutes.

7.      Warm the sieved apricot jam.

8.      Take the slice out of the oven.

9.      Spoon warmed jam over the slice.

10.  Serve hot or cold with vegan cream or ice cream.
