APPLE AND ORANGE TATIN Serves 6 For the base For the topping 100g hard vegan margarine 50g vegan margarine 200g white flour 900g cooking apples 25g icing sugar 50-75g brown sugar 5ml ground cinnamon 1 orange 1 orange 50g chopped mixed nuts To make the base 1. Rub margarine into flour. 2. Mix in the sugar, cinnamon and grated rind of the orange. 3. Add enough orange juice to form a medium dough. 4. Cover and chill in the fridge. To make the topping 1. Melt the margarine in a heavy-based frying pan and gently saute the apples and brown sugar for 2 minutes. 2. Add grated rind and juice of the orange and chopped nuts. 3. Continue cooking the apples for a few minutes more until the sauce becomes syrupy and the apples have softened a little. 4. Place the apples and syrup in the base of a greased 22.9cm spring form tin. 5. Remove the dough from the fridge and roll out roughly on a floured board. The dough need to be only slightly larger than the tin. 6. Place the dough over the apples, tucking any excess down the sides of the tin. 7. Bake for 25-30 minutes until the crust is golden brown. 8. Invert the tatin on a serving plate. 9. Serve hot or cold with vegan cream or ice cream.
