Serves 4 2 onions stock cube 225g carrots ˝ teaspoon yeast extract 400g tin tomatoes ˝ teaspoon mixed herbs 100g frozen peas 1 tablespoon olive oil 400g tin beans* salt and pepper 2 cloves garlic *Use mixed bean salad, chick peas, flageolet or kidney beans. If you use kidney beans you could add chili powder for chili non carne. As an alternative to beans use fried cubes of smoked tofu. 1. Slice onions and fry gently in the oil until slightly browned. 2. Add crushed garlic and carrots and fry for a few more minutes to seal. 3. Add tomatoes, herbs and stock cube. Simmer for about 10 - 15 minutes. 4. Add the peas and beans or fried tofu. 5. Bring back to boil and cook gently until the vegetables are cooked. 6. Season to taste. 7. Serve with boiled potatoes or rice. Should be moist, rich and colourful |
