FRUIT BRULEE

Serves 4

                        350g summer fruits                   60ml brandy

                        200ml soya cream                    8 drops vanilla essence

                        225g soya yoghurt                    65g demerara suga

1.      Place fruits in 4 flame proof dishes.

2.      Pour on tablespoon brandy over each dish.

3.      Mix the soya cream and yoghurt together and add the vanilla essence.

4.      Spread the yoghurt mixture over the fruit and chill for 2 hours.

5.      Sprinkle the sugar over the dishes and place them under a very hot grill until the

sugar caramelises.

6.      Serve immediately.
