RED FRUIT COMPOTE

Serves 4

                        450g rhubarb                             150ml water

                        75g brown sugar                        225g Red fruits (raspberries, strawberries                                and redcurrants).

1.      Trim and cut the rhubarb into 2.5cm lengths.

2.      Dissolve the sugar in the water and poach for about 10 minutes until just tender.

3.      Remove from heat and leave to go cold.

4.      Prepare the red berries as necessary (or use frozen)  and stir gently into the rhubarb

being careful not to break the fruits.

5.      Serve with vegan ice cream.
