LENTIL SLICE
Serves 4
Serve hot with roast potatoes, green vegetables, apple sauceand gravy
or cold with chutney.
350 g red split lentils
475 ml water
1 bay leaf
1 large onion
3 cloves garlic
50 g mushrooms
75 g breadcrumbs
1 tablespoon dried parsley
l tablespoon lemon juice
salt and pepper
1. Grease and line a shallow rectangular baking tin.
2. Put lentils, water and bay leaf into covered saucepan and simmer
for about 20 minutes, until lentils are tender and all the water is
absorbed.
3. Preheat oven to 190 C/Gas mark 5.
4. Put onion, garlic and mushrooms into food processor and chop finely
and mix into lentils.
5. Add breadcrumbs, parsley and lemon juice.
6. Season and mix well.
7. Spoon mixture into tin and level top.
8. Bake, covered with foil for 30 minutes. Remove foil and bake for
further 30 minutes until firm and golden brown on top.
