MACARONI & CHEEZE

Serves 8

¼ cup water + 1 tablespoon balsamic vinegar or lemon juice

1 large onion chopped

1 lb macaroni

2 cups water

½ cup peppers

½ cup raw cashew pieces

1/3 cup fresh lemon juice

1/3 cup nutritional yeast flakes

4 tablespoons white wine or mirin

2 teaspoon onion granules

2 teaspoon garlic granules

1 teaspoon salt

1        Heat the water and vinegar or lemon juice in a large saucepan.

2        Add the onion, cover and cook, stirring occasionally, until tender and lightly browned (15-20 minutes)

3        Meanwhile cook the macaroni.  Drain and stir into the cooked onions.

4        Process the remaining ingredients in a blender for several minutes until completely smooth.

5        Stir the blended mixture into the macaroni and onions and spoon into a lightly oiled casserole dish.

6        Bake uncovered for 25-35 minutes.

7        Serve immediately
