PEACH SHERBET

Makes about 1 litre

                        1 kg ripe peaches                     juice of 1 orange

                        170g caster sugar                     juice of 1 lemon

1.      Drop peaches into boiling water for 30 seconds.

2.      Remove peaches from water, slip off skins and remove stones.

3.      Puree the flesh.

4.      Mix puree, juices and sugar.

5.      Stir until sugar has dissolved.

6.      Pour mixture into a freezer tray, cover and freeze until it has the texture of stiff slush.

7.      Tip the sherbet into a chilled bowl and beat it vigorously.

8.      Return the mixture to the freezer tray, cover and freeze until firm.
