Potato Mash
1 kg potatoes
300 ml soya milk
25 g margarine
salt and pepper
chopped parsley
1. Peel potatoes and cut into even sized pieces.
2. Cook until just tender.
3. Drain and mash thoroughly.
4. Heat soya milk. remove from heat and beat into mashed potatoes.
5. Keep beating until the potatoes are white and fluffy.
6. Season and add margarine just before serving.*
7. Garnish with chopped parsley.
* To keep warm stand pan of potatoes in a saucepan of boiling water.
