QUICK NUT ROAST
Good hot or cold

Serves 4

50g vegan margarine
2 large onions, finely chopped
1 teaspoon dried thyme
1 tablespoon flour
150ml water
100g ground cashew nuts
100g ground hazelnuts
100g breadcrumbs
1 tablespoon lemon juice
salt and pepper
dried crumbs for coating
8 tablespoons oil for roasting

1. Preheat oven to 200C/400F/Gas Mark 6.
2. Gently fry onions in margarine for 10 minutes until tender.
3. Add thyme and flour, stir for 1-2 minutes, then add the water and stir until thickened.
4. Remove from the heat, add the nuts, breadcrumbs, lemon juice, salt and pepper. Mix well. Form into a loaf shape and coat in dried crumbs. Heat the oil in a small roasting tin in the oven until smoking hot. Put the nut roast into the tin and baste with the oil.
5. Bake for 35-40 minutes.
6. Remove from the tin. Serve immediately, cut into thick slices with gravy and vegetables or leave to cool if serving cold.

Even quicker nut roast
· 200g stuffing mix plus 200g mixed ground nuts
· Combine stuffing mix and nuts add liquid as directed on packet plus little more if needed
· Place mixture in shallow roasting tin and bake as instructed for stuffing mix or make into little balls or paties
