Ratatouille

Onions, peeled and sliced
Peppers, sliced
Courgettes, sliced
Aubergines, cubed
Mushrooms whole or in chunks if large
Garlic, crushed
Tomatoes, skinned and chopped
Salt
Mixed herbs - definately oregano works well
Olive oil

1. Sprinkle aubergine cubes with salt and leave to drain for 30 minutes.
2. Fry the onions, peppers and courgettes and mushrooms separately and set aside.
3. Rinse the salted aubergine cubes and squeeze out as much water as possible before frying.
4. Add the crushed garlic, fried vegetables and tomatoes, and simmer until cooked.
5. Season with salt, pepper and mixed herbs

Cheat with tinned tomatoes.

To serve as a main dish add cooked chick peas/kidney beans/butter beans etc.
