Serves 6 1 litre red wine (vegan) 6 hard pears 110g sugar finely pared zest of 1 small orange 2 sticks of cinnamon 6 cloves 1. Put half the wine, sugar, cinnamon, cloves and orange zest into a saucepan and gently heat until the sugar has dissolved completely. 2. Peel the pears carefully, leaving on the stems and arrange upright in a pan or oven proof dish. 3. Pour in the spiced wine and add enough of the remaining wine to cover the pears up to their stalks. 4. Cover the pan or dish and simmer very gently or cook in the oven at 120c/250f/Gas ˝ until they are tender and almost translucent. This will take between 1 - 4 hours depending on size and how hard the pears were. 5. Serve the pears hot, warm or chilled with a little of their syrup and vegan cream or ice cream. |
