Tofu or Cashew Stir Fry
Sliced
vegetables:
Bamboo shoots
Peppers
Onions
Carrots
Mushrooms
Water Chestnuts
Grean beans
Sweet corn
Broccolli
Cauliflower
Parsnip
Sliced or small whole tomatoes
Fry all the above in olive oil with crushed garlic, plenty
of fresh grated ginger, salt and pepper.
When
ready to serve add only a splash of tamari or soy and scatter lightly
fried cashews or golden fried smoked tofu cubes over the top.
If
you don't have smoked tofu or cashews use chickpeas or other beans
(flageolet, borlotti etc - out of a tin)
Beans
make an acceptable but less luxurious meal
