VEGETABLE PIE

Serves 4


FOR THE FILLING
2 onions, peeled and chopped
2 garlic cloves, crushed
1 kg diced vegetables
250ml water
2 vegetarian stock cubes
Salt and pepper to season
¼ teaspoon dried thyme (or other preferred herbs)
Half carton of soya dream (optional)

FOR THE TOPPING*
Short crust/flaky pastry

1. Fry the onions until soft.
2. Add dices vegetables and garlic and cook for few minutes.
3. Add water and stock cubes.
4. Simmer gently for 10 minutes.
5. Season with salt, pepper and herbs.
6. Remove from heat and allow to cool a little before adding the soya dream if using.
7. Transfer to an oven proof dish and
8. Cover with pastry.
9. Bake for 30 minutes at 220 C or gas mark 7

*Alternative toppings - Simmer vegetables until tender before preparing for oven. Bake for as long as it takes for the topping to be hot and slightly golden.
· Mashed potato
· Bread crumbs and finely chopped nuts

Serve with rice/roast potatoes and green vegetables or salad
