VERSATILE VEGETABLE MIXTURE

Serves 4


BASIC INGREDIENTS
2 onions, peeled and chopped
2 garlic cloves, crushed
1 kg diced vegetables
250ml water
2 vegetarian stock cubes
Salt and pepper to season
¼ teaspoon dried thyme (or other preferred herbs)
Half carton of soya dream

1. Fry the onions until soft.
2. Add dices vegetables and garlic and cook for few minutes.
3. Add water and stock cubes.
4. Simmer gently until vegetables are just cooked.
5. Season with salt, pepper and herbs.
6. Remove from heat and allow to cool a little before adding the soya dream

SERVE BASIC RECIPE WITH
· Roast potatoes and selection of vegetables
· Rice or pasta
· In a pie

ADDITIONAL INGREDIENTS
· Mushrooms
· Cashew nuts
· Mixed beans
